AARON GILLESPIE – Executive Chef

Passionate and talented, young Australian chef Aaron Gillespie joined the JIA Group as Executive Chef of 22 Ships and Ham & Sherry in May 2016. He started his culinary journey at the age of 16, gaining vast experience in fine dining restaurants in South Australia and Dubai.

Prior to arriving in Hong Kong, Aaron was Senior Sous Chef of the renowned Bread Street Kitchen by Gordon Ramsey in Dubai, and Chef de Cuisine at La Brasserie at the Atlantis the Palm Hotel in Dubai before that.

Aaron has been hand-picked by Jason Atherton to helm two of his Hong Kong eateries because of his acclaimed, fun, creative and stylish approach to food which make the restaurants he has worked at the hottest places to dine in town.


MATCH LO – Restaurant Manager

With nearly 15 years of experience, Match Lo is a seasoned veteran in the restaurant industry and no stranger to great service and best-in-class concepts.


After a stint at the LUX Bar & Restaurant, a longtime hub located in Hong Kong’s restless neighborhood of Lan Kwai Fong, Match went on to manage teams at some of Hong Kong’s most popular nightlife concepts until he landed the role of Assistant Manager at the Gaia group’s Bene Italian restaurant.


Match joined the JIA Group in 2012 as Assistant Manager at 22 Ships, the modern tapas bar also located on Ship Street. He was promoted to becoming the Manager at Ham & Sherry when it opened in December 2013. Match’s passion led him to be invited to the vineyards of Spain’s most well-known sherry bodegas, Gonzalez Byass, where he honed his knowledge on Sherries and hopes to revive in Hong Kong the great forgotten wine through Ham & Sherry’s extensive list.
